Caramel Apple Cake

Oh! You have to try this yummy cake. The flavors are wonderful and the caramel on top is perfect. The recipe is from Paula Deen so you know it's good. I even ate it for breakfast the morning after I made it. (Which I'm sure made my blood sugar go crazy. Good thing I didn't have a Dr. appt. that morning, they would have thought I was a diabetic for sure!)
Here is the recipe....
Ingredients:
2 1/2 cups sugar
3 eggs
1 1/2 cups vegetable oil
3 cups all-purpose flour
2 tsp. vanilla
1 cup chopped walnuts (I omitted)
2 1/2 cups diced apples, canned or fresh
I added 1 teaspoon of cinnamon (because apples need cinnamon)
Preheat oven 350 degrees. Cream together sugar, eggs, and oil. Add flour; mix together until well blended. Add vanilla, nuts, and diced apples. Spread into a lightly greased and floured 13 x 9-inch baking dish; bake for 45 to 60 minutes. Cake is done when toothpick inserted in center comes out clean. When cake is done, punch holes in it with a knife and pour topping over.
Caramel Topping:
1 1/2 stick of butter
1 cup of brown sugar
1/8 cup of milk
Heat all ingredients together over medium heat. Bring to a boil, stirring constantly. Let boil for about 2 minutes. Pour over warm cake.
Serves 15-20

Do you think I can make this and skip the apples? You know how I feel about cooked apples.
Maybe. I don't understand your problem with apples. You may be adopted.
This looks wonderful! I might have to make this for my book club next week. Perfect with a big cup of coffee!
Just found your blog, now I'm a follower!
