Dish of the Week

Apple Bread Pudding
This is goooood!!!
I have a lot of apples. I'm supposed to be making apple butter for my husband. It will happen. I swear it will. (that is to keep me motivated). But until I get that done I will make a whole bunch of other apple dishes. And enjoy every one of them.
Here is the recipe for this yummy dish....

PUDDING

4 cups soft bread cubes

1/4 cup raisins

2 cups peeled and sliced apples

1 cup brown sugar

1 3/4 cups milk

1/4 cup margarine

1 teaspoon ground cinnamon

1/2 teaspoon vanilla extract

2 eggs, beaten

VANILLA SAUCE

1/4 cup white sugar

1/4 cup brown sugar

1/2 cup milk

1/2 cup margarine

1 teaspoon vanilla extract

Directions

1.Preheat oven to 350 degrees F (175 degrees C). Grease a 7x11 inch baking dish.

2.In a large bowl, combine bread, raisins, and apples. In a small saucepan over medium heat, combine 1 cup brown sugar, 1 3/4 cups milk, and 1/4 cup margarine. Cook and stir until margarine is melted. Pour over bread mixture in bowl.

3.In a small bowl, whisk together cinnamon, 1/2 teaspoon vanilla, and eggs. Pour bread mixture into prepared dish, and pour egg mixture over bread.

4.Bake in preheated oven 40 to 50 minutes, or until center is set and apples are tender.

5.While pudding is baking, mix together sugar, 1/4 cup brown sugar, 1/2 cup milk, and 1/2 cup margarine in a saucepan. Bring to a boil, then remove from heat, and stir in 1 teaspoon vanilla. Serve over bread pudding.

Pumpkin Pickin'

Today we are venturing back to Parma to pick out some pumpkins from my parents' garden. It's really nice to have access to a little pumpkin patch. I've grown them before and hopefully we'll grow them again next year. I'm already planning a garden, are you? I think I'll try to grow some white pumpkins.

My Halloween Decor

Today I'm sharing a little of my house. I did some decorating for Halloween. Not too much this year but our house is starting to feel like our home. Even though most of the colors in my home are on the pastel side, they contribute nicely to fall shades.
 My orange accent hutch loves Halloween.

Dish Of The Week

Caramel Apple Cake

Oh! You have to try this yummy cake. The flavors are wonderful and the caramel on top is perfect. The recipe is from Paula Deen so you know it's good. I even ate it for breakfast the morning after I made it. (Which I'm sure made my blood sugar go crazy. Good thing I didn't have a Dr. appt. that morning, they would have thought I was a diabetic for sure!)

Here is the recipe....
Ingredients:

2 1/2 cups sugar
3 eggs
1 1/2 cups vegetable oil
3 cups all-purpose flour
2 tsp. vanilla
1 cup chopped walnuts (I omitted)
2 1/2 cups diced apples, canned or fresh
I added 1 teaspoon of cinnamon (because apples need cinnamon)
Preheat oven 350 degrees. Cream together sugar, eggs, and oil. Add flour; mix together until well blended. Add vanilla, nuts, and diced apples. Spread into a lightly greased and floured 13 x 9-inch baking dish; bake for 45 to 60 minutes. Cake is done when toothpick inserted in center comes out clean. When cake is done, punch holes in it with a knife and pour topping over.

Caramel Topping:

1 1/2 stick of butter
1 cup of brown sugar
1/8 cup of milk

Heat all ingredients together over medium heat. Bring to a boil, stirring constantly. Let boil for about 2 minutes. Pour over warm cake.
Serves 15-20

Nursery Rhymes

I have 4 children. I will soon have 5. Out of 5 children I have had a total of 1 nursery.
 It was the sweetest little baby room and I spent a lot of time in that room. It had a super comfy loveseat and calming colors and a big smiley sunshine on the wall. It was my happy place.
If you have the chance to have a nursery I suggest you take advantage of it. You'll never regret it.

I think this nursery is so very nice. And the yellow crib makes me smile.

Halloween Birthday: Five Yr Old Style

My youngest son has his birthday a week before Halloween. We decided to do a "Spooky Party" this year. He is so excited that he hasn't stopped talking about it. Since July.

Dish Of The Week

Apple Crisp

This is my favorite dish to make when the weather cools. My parents have a small apple orchard and I love that I live close enough to share in their bounty. And it is such a delicious bounty! I had this for breakfast this morning.
Such a good way to start my day!

The recipe I use is a very old one that I love. It doesn't have oats in it but you won't miss them. I've had many compliments over the years and if you make it expect it to be gone very quickly.

My Mom's Apple Crisp
6 apples, peeled and sliced
1/2 c brown sugar
1/2 t cinnamon
1/4 t cloves
2 t lemon juice
Mix together and place in 8 x 8" pan.
1/2 c sugar
3/4 c flour
1/2 t salt
1/2 c butter (soften a little bit)
1/4 c chopped nuts (opt)
Mix together and sprinkle over top of apple mixture.
Bake at 375 deg. for 45 min.
Warm it up and eat it with ice cream!
